With the family patiently waiting for dinner to be on the table it's brilliant to be able to open the freezer and gather a few simple ingredients together.

Along with a few store cupboard bits and bobs you can produce a tasty and filling quality meal in under 30 minutes, and that's from start to finish!

I can hear you saying, 'Under 30 minutes; yeah right, with all that chopping involved'?

But it's true, and what's more, there's no need for a knife or kitchen scales anywhere in my amazingly simple and easy recipe.

No peeling, chopping or weighing the ingredients!

Spicy Beef and Bean Tortillas

Having been asked to take part in the #PowerofFrozen campaign by Iceland Foods I took on their 'Cut the Hassle' recipe challenge and I came up this Spicy Beef & Bean Feast.

By using frozen food products that can be cooked straight from the freezer. There's none of the tedious peeling or chopping since it's been done for you!

Frozen food is not only convenient but can actually save you money too; since you only use what you need from the packet and then just pop the rest back into the freezer.

My Spicy Beef can also be easily turned into a quick Chilli con Carne just by serving with rice instead of tortillas.

Of course, the amount of spiciness depends on your taste, you can add more or less chilli, it's entirely up to you.

I must say I'd never bought frozen minced beef until now but after studying the different packs available I went for Beef Steak Mince and bought the Diced Onions separately.

Also available if you prefer, is Minced Beef with Onions already added. I chose to buy them separately purely because the fat content of the Beef Steak Mince I used is a lot lower in fat than the one with the onions mixed in.

Anyway, check out the freezer cabinets in your local Iceland store and buy whichever works for you.

Spicy Beef and Bean Tortillas

Spicy Beef and Bean Tortillas

Makes enough to fill 6 soft flour tortillas, or if served with rice enough for 2 people.

Prep time: 3 Min Cook time: 25 Min Total time: 28 Min

Ingredients

Measurements used are just a standard sized teacup which holds 250 ml water

  • 3 cups Frozen Beef Steak Mince
  • 1 ½ cups Frozen Diced Onions
  • 1 ½ cups Frozen Quick Cook Sliced Mixed Peppers
  • ½ cup Frozen Supersweet Sweetcorn
  • 1 tablespoon Frozen Garlic
  • 1 tablespoon Frozen Red Chilli
  • 6 Small Soft Flour Tortillas
  • About a tablespoon of Vegetable Oil
  • 2 tablespoons of Tomato Ketchup
  • 2 teaspoons Paprika
  • 1 tablespoon Cumin
  • 1 x 400g Red Kidney Beans – rinsed and drained. You will only need half the can; you can use the rest in another recipe.
  • Black pepper to taste - you can also add a little sea salt if you think it needs it.

To serve

  • Diced tomatoes and freshly picked coriander - leaves only. Sour cream on the side.

Instructions

  1. Heat a tablespoon of oil in a large frying pan then add the minced beef, onions, peppers and sweetcorn.
  2. Cook over a medium heat stirring now and then to ensure everything cooks evenly (for about 20 minutes).
  3. Then add in the tomato ketchup, garlic, chilli, paprika and cumin.
  4. Stir well then add the rinsed and drained kidney beans.
  5. Cook for another 5 minutes or until everything is cooked and piping hot.
  6. Taste to check the seasoning adding black pepper and a little sea salt if you think it's needed.
  7. Pile the mixture into the tortillas and top with diced tomatoes and chopped coriander if liked and serve immediately.
